Viogner can be made in a variety of styles. Some are highly alcoholic, some have full new oak fermentation, some are stainless steel fermented and other are even fermented to retain some residual sugar. Thomas Clay has decided to try to let the grape's natural floral quality shine through by fermenting in stainless steel and blocking malolactic fermentation. Its deep, concentrated flavors & aromas of apricots, white peaches & fragrant citrus flowers are not burdened by oak. The sensual richness of the wine is offset by mineral & citrus, making it refreshing to drink. Because of this wine's naturally high acidity, we suggest having this wine with something creamy: ripe brie cheese at room temperature, a traditional caesar salad or your favorite creamy creation. |
