This white Bordeaux grape is the foundation of some of the most treasured dry white wines in the world. Its stature was buffeted in 1997 when DNA fingerprinting established that it, along with Cabernet Franc, was the "parent" of Cabernet Sauvignon. In fact, Sauvignon Blanc and Cabernet Sauvignon, although different in color, share a similarly "herbaceous" nose. While some California Sauvignon Blancs have morphed into the more "oaked" Fume Blanc (same grape variety, more oak aging), the classic varietal character of Sauvignon Blanc is best suited to steel tank fermentation, which allows the bright tropical, fig and grassy flavors to dominate. Our Sauvignon Blanc is fashioned in a style that emphasizes varietal fruit flavors of melon, kiwi, and lemon while minimizing the grassy/ herbaceous nature of the variety. Seven months of French Oak barrel aging has provided subtle toasty and caramel aromas in the nose while frim acidity is evident in the palate. This wine is an excellent accompaniment to all types of shellfish and seafood dishes as well as lightly flavored salads. |
